Thawing large chunks of beef → Vacuum tumbling and marinating → Braising → Removing from the braising liquid, spreading out to cool, and draining excess moisture → Cutting into portions → Mixing externally with seasonings → Vacuum packaging → High-temperature sterilization
Key operational points
1. Marinating involves two steps: After the tumbling and marinating process is complete, continue marinating in the refrigerator for about 18 hours.
2. When simmering over low heat, it is recommended to maintain the temperature between 95℃ and 98℃.
