Traditional lion’s head meatballs are characterized by their tender, fall-off-the-bone texture while retaining their shape. Recently, at the request of our clients, we’ve undertaken the development and refinement of this classic dish. While preserving the key techniques of traditional lion’s head preparation, we’ve adopted a more flexible and seasonal approach to ingredient selection. The meatballs are first deep-fried and then steamed, resulting in a crispy, fragrant, tender, smooth, and exceptionally soft texture.

The process now involves first deep-frying and then steaming—resulting in a dish that’s delightfully crispy, fragrant, tender, smooth, and exceptionally soft and glutinous.

Through on-site communication, we have developed a lion's head product made by mixing, marinating, shaping, and deep-frying, using chicken and pork as the main ingredients, along with Baker’s natural spices, water-retaining agents, Arctic Fresh, and other products. The product is required to have a natural flavor, an attractive appearance, and a crispy, fragrant, soft, and chewy texture.

The improved and newly developed “Lion’s Head” product not only boasts a beautiful appearance and excellent shaping, but also delivers a texture that is both crispy, fragrant, and delightfully soft. It accentuates the natural richness of the meat, with an authentic, savory aroma that truly captures the original flavor and essence of the ingredients. The product is highly resistant to high temperatures and steaming, remains firm and doesn’t easily fall apart, and produces a rich, flavorful broth.
