Water-soluble flavorings refer to natural and synthetic flavoring agents that are soluble in alcoholic solvents. They are widely used in products such as fruit juices, jellies, jams, ice cream, tobacco, alcoholic beverages, perfumes, and floral waters. When using these flavorings, there are typically five key points to keep in mind:
(1) When using fragrances, pay attention to the dosage, which should be determined based on the actual situation. The typical addition rate is 0.1–0.2%.
(2) When using fragrances, pay attention to whether they can dissolve and whether the fragrance type and color are suitable.
(3) When using fragrances, pay attention to maintaining an appropriate temperature. During the fragrance addition process, do not exceed the specified temperature range; it is best to add the fragrance when the product temperature is relatively low. For daily chemical products, fragrance blending is typically carried out at 40–45℃. For water-soluble fragrances, the heating temperature should not exceed 70℃.
(4) When using fragrances, pay attention to maintaining an appropriate pH level. A pH that is too high can alter the fragrance’s scent. It’s best to avoid mixing fragrances with solutions that have a significantly high pH.
(5) Fragrances are highly volatile and tend to evaporate easily, losing their potency. If stored improperly, they can easily deteriorate under the influence of environmental factors such as light, oxygen, and heat, thereby compromising the overall fragrance and olfactory character of the scent and affecting the quality of scented products. Therefore, fragrances must be stored properly.
